Jellied Salad (Diabetic)

2 pkgs jello
2 cups hot water
1 can of crushed pineapple
1 cup grated carrots
1 cup grated celery
1 tbs vinegar
pinch of salt.

Dissolve jello in hot water.
Add vinegar and salt.
Let partially set.
Add remaining ingredients and return to fridge until set.
